1. Backflushing: Deep Cleaning the Valves
Backflushing is the process of internal cleaning of the brew circuit that cannot be reached with a brush alone.
How It Works:
- Blind Filter Basket: A rubber blind disk (without holes) is inserted into the portafilter.
- Reverse Pressure: When you activate the shot, the water cannot exit. Pressure builds up and is rerouted through a three-way valve (present in almost all modern professional machines) which discharges the dirty water, oils, and internal residues into the drip tray.
- The Detergent: This operation is performed with a specific coffee machine detergent (alkaline cleaner or Cafiza). The detergent is necessary to dissolve oils that hot water alone cannot remove.
